Ingredients:

  • 1 whole cooked New Brunswick lobster, split lengthwise with tomalley removed
  • 2 green onions
  • 1 stick of butter
  • 2 tbsp lemon juice
  • Pinch of salt
  • Pinch of ground pepper
  • 1 tsp minced garlic

Preparation:

  1. Slice the green onions thinly and char them on a hot grill.
  2. In a small sauce pot over low heat, melt the butter with the charred green onions, lemon juice, garlic, salt, and pepper. Cook for 5 minutes, then keep warm.
  3. Clean and lightly oil the grill, then bring it to medium heat.
  4. Brush the lemon butter mixture on the flesh side of the lobster halves, then place the lobster flesh side down on the grill. Cook for about five minutes.
  5. Turn the lobster halves over, brush on more lemon butter, and cook with the shell side down for another five minutes.
  6. When finished, the lobster meat should be firm and opaque throughout.
  7. Serve the lobster with the remainder of the green onions, butter, and grilled lemons on the side.
