Every spring, our producers head to the forest to sustainably harvest sap they transform into millions of litres of Grade A maple syrup, making New Brunswick one of the world’s top three producers.

These ruby-red gems from the wild are native to New Brunswick, the third-largest producing province in a nation that’s the world’s second-largest cranberry producer. Along with ideal conditions for Honeycrisp, our orchards grow a range of varieties enjoyed worldwide, fresh, in juices and ciders, and for baking.
Innovation: It’s In Our Nature
In New Brunswick, we are never far from the forest or field. Farming, foraging and food production have deep roots in our province, where making a living from the land has been a way of life for generations. Centuries of growing and processing experience combined with cutting-edge technology and science have produced many breakthroughs:
- Collaborations between wild blueberry growers and researchers have resulted in new technologies, equipment, and techniques to streamline harvest and increase yields.
- Over 95% of New Brunswick wild blueberries are sold to processors who clean, sort and grade the berries for freezing. Individual Quick Freezing (IQF) preserves their nutritional value and great taste and makes them easy to pour from the container.
- The frozen french fry! New Brunswick is home to the world’s largest producer of frozen potato products and to Florenceville-Bristol, a small farming community that’s the world’s French fry capital.
- Our potato industry is supported by the work of leading agricultural scientists from the federal and provincial governments and industry associations.
- The Potato Research Centre in Fredericton, New Brunswick, is home to the national potato breeding program. The centre is part of a nationwide network of researchers, consultants and crop advisors with international expertise in potato pathology, physiology, entomology and processing.
- Our elite potato seed production facilities are constantly developing improved methods of disease-free propagation and multiplication.
- When Francis Peabody Sharp, a 19th-century New Brunswick grower, mastered the tricky technique of crossbreeding apple trees, he pioneered the method to create new varieties, becoming Canada’s first fruit tree breeder. Many Sharp varieties are still grown here, including Crimson Beauty, an all-red dessert apple he bred in 1854.
- Our apple industry has invested in state-of-the-art controlled storage technology for increased quality and long-term storage.
