New Brunswick’s Big Five
Atlantic Salmon
From Ocean to Plate
in 48 Hours
The birthplace of North America’s aquaculture industry, New Brunswick is home to the continent’s largest producer of Atlantic salmon. We harvest more than 50 million pounds of melt-in-your-mouth, sashimi-grade salmon annually. So safe you can eat it raw.
Coldwater Shrimp
Small Size, Epic Flavour
Wild-caught from the icy depths of the North Atlantic, our coldwater shrimp are smaller and sweeter than warm-water species. State-of-the-art freezing and processing preserve the taste, colour, texture and nutritional value of these plump, juicy little flavour bombs.
Our Fishing Heritage Runs Deep
In New Brunswick, the ocean is our backyard. Fishing isn’t just an industry–it’s a way of life. Centuries of cultivating and harvesting have given our rural, coastal and Indigenous communities exceptional expertise and produced world-first innovations.
- New Brunswick paved the way for high-pressure processing (HPP) in the lobster industry. This no-heat process preserves its flavour, texture and nutrition. State-of-the-art handling and packing ensure a year-round supply with a long shelf life.
- The birthplace of North America’s salmon aquaculture industry. Our specialists and research partners in government, the private sector and academia have a vast knowledge base that’s continually advancing the field.
- A pioneer in the shellfish industry, New Brunswick oyster cultivators transformed traditional growing techniques into globally adopted technologies and practices.
Our Wild Roots are Showing
New Brunswick is a small, unspoiled province on Canada’s east coast with glacial coastlines bordering an epic ocean. Bounded by the North Atlantic, we are home to the mighty Bay of Fundy, which refreshes our fishing grounds and farms with the world’s highest tides twice daily. Our extremely clean, cold and salty water is the ultimate merroir for superior seafood.
Safety You Can Trust. Quality You Can Taste.
New Brunswick seafood comes with a side order of peace of mind. Our close-knit culture values trust and connection to our neighbours, communities, and environment, fostering a strong sense of stewardship. We follow the most rigorous regulations for food safety and environmental, financial, and social sustainability. In New Brunswick:
- Processed lobster products are made from freshly caught live lobster under stringent Quality Management Program Standard (QMP) standards
- All processors meet global food safety standards as part of their license
- All processing facilities meet federal and international quality assurance standards
- Most of our salmon is 4-star Best Aquaculture Practices (BAP) certified
- All exporters are certified by the Canadian Food Inspection Agency (CFIA)
- We employ science-backed harvesting, aquatic animal health management strategies
- We have rigorously regulated licenses and seasons
An Ocean of Choice
Whether you’re looking for a high-volume, year-round supply of lobster or a unique, seasonal product for your menu, there’s a New Brunswick producer for you. Along with large-scale processors for lobster, crab, salmon, oysters and more, we’re home to a range of smaller artisanal producers and unique product offerings. New Brunswick is the:
- World’s largest producer of dulse. This delicious, nutritious seaweed is still harvested by hand at low tide from small wooden boats, then sun-dried.
- No. 1 source of smoked herring. We produce 95% of the global supply, much of it using traditional weirs and wooden smokehouses.
- Source for a wide variety of value-added lobster, salmon, and crab products and formats, including smoked, tinned and more.
