Cajun Butter
Ingredients
- Butter
- ½ pound unsalted butter, softened
- 3 ½ tbsp mild Cajun spice
- 1 tbsp chopped parsley
Preparation
- Allow the butter to soften until it can be easily stirred.
- In a medium bowl, combine the butter and all the spices. Mix well.
Snow Crab Boil
Ingredients
- 3 lemons, divided
- 1/2 cup mild Cajun spice
- 8 cloves of garlic, smashed
- 1 onion, peeled and cut into 6 pieces
- 1 lb small New Brunswick potatoes, halved
- 4 ears of corn on the cob, cut into 3–4-inch pieces
- 1 pound green beans, cleaned and trimmed
- 5 lbs of New Brunswick snow crab clusters, pre-cooked
Preparation
- Cut 2 of the lemons into quarters. Slice the remaining lemon into wedges and set aside for garnish.
- Fill a large pot with 14 to 16 cups of water.
- Place the 2 quartered lemons in the water with the Cajun spice, garlic, and onion. Bring to a boil.
- Add the potatoes to the pot and cook for 8 minutes.
- Add crab and corn, and cook for 5 minutes.
- Add the green beans and cook for 2 to 3 minutes.
- Drain the seafood mixture from the pot onto a serving tray, reserving 1 cup of the broth.
- Melt the Cajun butter in a small saucepan and whisk in the reserved broth. Pour the broth over the seafood mixture. Enjoy!
