Maple Crème Brûlée

Ingredients

  • 500 ml whipping cream
  • 2 eggs
  • 2 egg yolks
  • 100ml Grade-A, dark New Brunswick maple syrup
  • 3 tablespoon New Brunswick maple sugar
  • 3 tablespoon granulated sugar

Preparation

  1. Heat oven to 325 degrees.
  2. In a saucepan, scald the cream over low heat.
  3. In a bowl, beat the yolks, eggs, and syrup until you reach a light blend.
  4. Temper the cream into the egg mixture.
  5. Pour into four 6-ounce ramekins and place ramekins in a baking dish.
  6. Fill the dish with boiling water halfway up the sides.
  7. Bake for 30 to 40 minutes or until the centers are barely set.
  8. Let it rest until it cools completely. Refrigerate for several hours, potentially up to a couple of days.
  9. When ready to serve, top each custard with a mixture of granulated sugar and maple sugar, using 1 or 2 teaspoons in a thin layer.
  10. Place ramekins in a broiler 2 to 3 inches from heat source. Turn on broiler. Broil until the sugar melts and browns or even blackens a bit for approximately 5 minutes.
  11. Serve within 2 hours.
