Cajun Butter

Ingredients

  • Butter
  • ½ pound unsalted butter, softened
  • 3 ½ tbsp mild Cajun spice
  • 1 tbsp chopped parsley

Preparation

  • Allow the butter to soften until it can be easily stirred.
  • In a medium bowl, combine the butter and all the spices. Mix well.

Snow Crab Boil

Ingredients

  • 3 lemons, divided
  • 1/2 cup mild Cajun spice
  • 8 cloves of garlic, smashed
  • 1 onion, peeled and cut into 6 pieces
  • 1 lb small New Brunswick potatoes, halved
  • 4 ears of corn on the cob, cut into 3–4-inch pieces
  • 1 pound green beans, cleaned and trimmed
  • 5 lbs of New Brunswick snow crab clusters, pre-cooked

Preparation

  • Cut 2 of the lemons into quarters. Slice the remaining lemon into wedges and set aside for garnish.
  • Fill a large pot with 14 to 16 cups of water.
  • Place the 2 quartered lemons in the water with the Cajun spice, garlic, and onion. Bring to a boil.
  • Add the potatoes to the pot and cook for 8 minutes.
  • Add crab and corn, and cook for 5 minutes.
  • Add the green beans and cook for 2 to 3 minutes.
  • Drain the seafood mixture from the pot onto a serving tray, reserving 1 cup of the broth.
  • Melt the Cajun butter in a small saucepan and whisk in the reserved broth. Pour the broth over the seafood mixture. Enjoy!
